an analysis of the product antioxidant power, whether processed or not, with, if need be, the development of a specific method,
an accompaniment on the development of a product, a process...
with the help of external collaborators, the determination of an antioxidant or oxidizing power on biological matrices (plasma, urine, cell or animal model).
The CEDEVIT team is currently working on various projects including:
Bioavailability of polyphenols in collaboration with the NAS Hospital-University Platform on two axes: analysis of polyphenols in plasma by UPLC and analysis of urinary polyphenols by spectrophotometric assay;
Influence of cooking on various bioactive molecules including polyphenols and antioxidants.
